Along with Harvard food scientist and PhD student Larissa Zhou, Maggie Coblentz, research specialist with the Space Exploration Initiative, organized and moderated a workshop on "Space Technology for Food System Resilience and Sustainability" at this year's International Astronautical Congress in Paris, France. This workshop addressed the following question: "How can technologies designed for feeding humans in space be developed to benefit communities on Earth?", starting with short presentations by the speakers, followed by an interactive activity involving all participants. The speakers called on engineers, scientists, artists, designers, and all-around problem solvers to join them in co-designing the future of sustainable food technology and to imagine a future of sustainable space food technology that addresses environmental and social sustainability.
